About this course

Would you like to gain skills to work in the meat industry? Australia’s red meat and livestock industry makes a significant contribution to the Australian economy.

In this training you will gain an overview of the meat industry and learn how to prepare shelf ready retail products, specialty meat cuts and gourmet meat.

This course will teach you how to:

  • maintain equipment
  • apply hygiene and sanitation practices
  • comply with Quality Assurance and Hazard Analysis Critical Control Point (HACCP) requirements
  • follow safe work policies and procedures
  • provide meat preparation customer service
  • communicate in the workplace.

You can choose elective subjects in your areas of interest, for example:

  • operating mechanical aids
  • trimming and despatching carcasses
  • packing meat products
  • operating packaging machinery or vehicles
  • poultry processing
  • meat retailing
  • smallgoods
  • food processing.

Note that the availability of electives may vary depending on your selected training provider.

On completion of this training, you could work as a meat process worker, abattoir packer, hide processor, abattoir stock handler, offal processor or loadout operator.

This qualification is recognised nationally under the Australian Qualifications Framework (AQF).
